But, sometimes vegan cookie recipes call for vegan butter or another type of butter substitute that you may not always have on hand. And, sometimes you just want a cookie now. As much as I love baking vegan cookies, I don’t always have vegan butter on hand either, as I eat regular butter and cook with it as well. So, I have to consciously buy vegan butter, and sometimes they are out of stock. So today I’m sharing a recipe for Vegan Coconut Oil Chocolate Chip Cookies for those times when all you have is coconut oil.
This easy recipe for Vegan Coconut Oil Chocolate Chip Cookies is one you can make with ingredients that should be easy to find anytime, or that you may already have in your pantry (like me). I made these cookies extra big, they are really like two of my regular sized cookies. So keep that in mind if you bake my cookie recipes frequently, these will be much larger than usual!
Even if you aren’t vegan, these are an amazing soft and chewy chocolate chip cookie recipe that you can make and everyone will love. Their slightly sweetened flavor from the coconut oil makes for a little different chocolate chip cookie!

Ingredients for Vegan Coconut Oil Chocolate Chip Cookies
Organic Coconut Oil
I’m using organic coconut oil here, and I buy the one from Costco! If you don’t like coconut flavor, you can buy a refined coconut oil, which has the coconut flavor removed if you don’t like the flavor as much.
Organic Light Brown Sugar
I make this recipe easy and just use organic light brown sugar, so you only need one type of sugar. Try my Homemade Light Brown Sugar!
Organic Vanilla Extract
My favorite organic vanilla extract is Simply Organic. It really has the best and most pure vanilla flavor.
Organic Coconut Milk
I use organic coconut milk in this recipe, my favorite being Real Coco. I use this all the time in baking and also in my smoothies, I love it!
Organic All Purpose Flour
I use all purpose flour in these cookies, which is what any traditional chocolate chip cookie uses. I use organic unbleached all purpose flour, which is the best kind. Try to make the switch next time you are out of flour, I’m sure you will be very happy. My favorite is from Cairnspring Mills as they make fresh milled flour!
Organic Semi Sweet Chocolate Chips
If you are vegan, make sure you are using vegan chocolate chips. The chocolate chips I use all the time are Equal Exchange Semi Sweet Chocolate Chips and they are naturally vegan, and they’re so good! Some semi sweet chocolate chips may have milk in them, so be sure to look at ingredients.

Why Organic
Why use organic ingredients in this recipe? You all know I’m a huge organic advocate, and I bet you may be thinking sometimes, Why would I even bother to use organic ingredients in something that is so sweet and indulgent? But, that is the exact reason why you should use organic ingredients! Sweet things need to have flavor in order to be good, otherwise they are just sweet and they don’t taste like much else. Organic ingredients are more pure than conventional ones, therefore they actually have more flavor than the non organic options. Say it with me, organic means more flavor! And not just more flavor but a more true and pure flavor. And organic ingredients are much healthier for you to eat in general as they do not contain GMOs or anything artificial. Plus, you are being environmentally friendly when you choose organic ingredients!

Soft and chewy Vegan Coconut Oil Chocolate Chip Cookies are sure to be a favorite in your house! This easy vegan cookie recipe is one that you’ll love, even if you aren’t vegan!
Ingredients
113 grams (1/2 cup) organic coconut oil
226 grams (1 cup) packed organic light brown sugar
1 teaspoon organic vanilla extract
1/3 cup organic coconut milk
255 grams (2 cups) organic all purpose flour
3/4 teaspoon fine salt
1/2 teaspoon baking soda
198 grams (1 cup) organic chocolate chips
Directions
- Line 2 baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, add the coconut oil, light brown sugar, and vanilla extract. Mix on low until completely combined and there are no chunks of coconut oil.Â
- Add the coconut milk, flour, salt, and baking soda in that order. Mix on low until combined. Add in the chocolate chips and mix again until combined.
- Using your hands, roll the dough into 12 balls and place on the prepared baking sheets, 6 per tray. Flatten them so they are about 2 1/2-inches in diameter. Refrigerate the baking sheets for 1 hour.
- Preheat the oven to 375°F. Bake for 13 to 15 minutes or until lightly golden brown on the bottoms. Allow to cool completely on the baking sheets.
Notes
- Gluten Free — Replace the all purpose flour with 269 grams (1 3/4 cups) organic gluten free flour blend.
- High Altitude — Bake at 375°F for 12 to 14 minutes or until lightly golden brown on the bottoms.
