These Tomato Basil Soft Tacos are an amazing healthy take on traditional tacos! I use turkey, tomato, fresh basil, yellow bell peppers, and mozzarella cheese and wrap them up in a flour tortilla. I top these tacos with balsamic vinegar and olive oil, making them easy to make any night of the week!

Today I’m sharing a super easy and healthy lunch or dinner recipe. I have been making these Tomato Basil Soft Tocos a lot recently! They came about when I bought mozzarella, tomatoes, and basil because I was going to make my Napoli Pizza. However, I forgot to make pizza dough, haha.
So, while hungry, and rummaging through my fridge I came up with this recipe for Tomato Basil Soft Tacos. We also have a lot of tortillas right now, as I buy cases online of organic tortillas from La Tortilla Factory, as I can’t buy organic tortillas here in town. So, those stuck out at me. And I wanted to add protein, so I grabbed the turkey. Tomatoes, basil, mozzarella, yellow bell pepper, and a drizzle of your favorite balsamic salad dressing, and you have a super quick and easy lunch or dinner recipe!
I sometimes use Elda’s Kitchen Organic Balsamic Vinegar Salad Dressing in this recipe. But, you can use any kind of balsamic dressing you like, or even just plain balsamic vinegar and a drizzle of extra virgin olive oil. And, you can even use a lemon olive oil dressing if you like, I do this sometimes as well as that’s one of my favorite dressings and it goes well with everything!

I love making these healthy Tomato Basil Soft Tacos for lunch or dinner. The best part about this recipe is that it’s just adding things together – no cooking required!
Ingredients
2 organic flour tortillas
4 slices organic turkey
3 pieces organic Romaine lettuce, chopped
2 ounces organic mozzarella, grated
Half organic yellow bell pepper, sliced
3 slices organic tomato, halved
1/4 cup organic basil leaves, chopped
organic balsamic vinegar
organic extra virgin olive oil
salt and pepper to taste
Directions
- In a skillet, add a tortillas one by one and heat until warmed.
- Once the tortillas are warmed, add the turkey, lettuce, mozzarella, bell pepper slices, tomatoes, and basil.
- Drizzle with the balsamic vinegar, extra virgin olive oil, and a sprinkle of salt and pepper (or your favorite balsamic dressing!
- Serve immediately.
