Tomato Basil Grilled Cheese

Today it actually felt like fall outside, shocker! I wore a puffy while walking Otto this morning, it was so nice! It was partially because we’ve had some haze due to all the smoke I think, but despite the early morning fog we ended up actually having a sunny day today. Which was amazing, not only was it cooler but it was also finally sunny.

Because of all the smoke, they’ve closed all National forest land so there’s basically no outdoor activities going on right now – no camping, no climbing, no hiking, no nothing! So while I’m usually home alone on Wednesdays because Delaney is off climbing, he was home all day with me. We had a really nice relaxing day of unpacking more things and hanging up some art in the house. I’m getting close to having art up so I can finally share more of our house with you guys!

It’s still tomato season for a little bit longer and we had some fresh ones today. So we made Tomato Basil Grilled Cheese for lunch. So good! This simple sandwich is something I make often, and today I was finally able to capture it to share the recipe with you. Tomato Basil Grilled Cheese

Tomato, basil, and mozzarella are sandwiched between sourdough bread for a quick and easy lunch.

Ingredients

  • 2 slices organic sourdough bread

  • 4 slices organic mozzarella cheese

  • 4 slices organic tomato

  • organic fresh basil leaves

  • organic black pepper

  • fine sea salt

  • 2 tablespoons organic salted butter

Directions

  • Assemble the sandwich by adding 2 slices of mozzarella on each side. Place the tomato slices on one side and the basil leaves on the other. Salt and pepper each side.
  • In a small saucepan, add 1 tablespoon butter and turn onto low heat. Allow butter to melt, then place sandwich in pan. Cover with a lid. Cook for 2 to 4 minutes or until lightly golden brown on the bottom.
  • Flip, adding the other tablespoon of butter into the pan, and then set down sandwich. Cover with lid and cook for another 2 to 4 minutes or until lightly golden brown on the bottom and the mozzarella is completely melted. Remove from heat.
