Yes, absolutely. If you want to make these donuts the day before you plan to serve them to you can do that. Because they are cake, they do need to be stored in an airtight container, so they don’t dry out. A cake dome is the best option for these. I actually made them the day before Halloween and then served them to my friends the next day!
Can I use apple cider that isn’t sparkling?
Yes, if you have traditional apple cider that isn’t sparkling, you can use it in place of the sparkling in this recipe. The sparkling does give these donuts a very light texture, but they will still be delicious with the regular option as well.

Ingredients
- Batter
255 grams (2 cups) organic all purpose flour
170 grams (3/4 cup) organic cane sugar
2 teaspoons baking powder
1 teaspoon organic cornstarch
1/4 teaspoon organic nutmeg
1/4 teaspoon organic cinnamon
1/2 teaspoons fine sea salt
1 organic large egg
1/2 cup organic heavy whipping cream
1/2 cup organic sparkling apple cider
1/2 cup organic Greek vanilla yogurt
6 tablespoons organic salted butter, melted
1 teaspoon organic vanilla extract
Organic canola oil cooking spray
- Topping
3/4 cup (170 grams) organic salted butter, melted
226 grams (1 cup) organic cane sugar
1 1/2 teaspoons organic cinnamon
Directions
- Preheat the oven to 400°F.
- To make the batter: In the bowl of a stand mixer fitted with the paddle attachment, add the flour, cane sugar, baking powder, cornstarch, nutmeg, cinnamon, and sea salt and whisk together to combine.
- Add the egg, heavy whipping cream, sparkling apple cider, yogurt, melted butter, and vanilla extract. Mix on low until combined into a thick batter. Transfer the batter to a piping bag.
- Spray the donut pans with canola oil cooking spray. Pipe the batter into the pans, or if you don’t want to pipe, you can also just spoon it into the pans too!
- Bake for 10 to 14 minutes, or until a wooden pick inserted in the center comes out clean. Allow to cool completely in the pans.
- To make the topping: In a medium bowl, add the cane sugar and cinnamon.
- Dip each donut into the melted butter and then dip it into the cinnamon and sugar mixture to coat it completely.
- Store in an airtight container for up to 3 days.
Notes
- High Altitude — Bake at 400°F for 8 to 12 minutes, or until a wooden pick comes out clean.
