This recipe for a Simple Green Salad starts with a spring mix, and I add in green bell peppers, avocado, cucumbers (or The Best Refrigerator Pickles!), celery, pumpkin seeds, pistachios, green onions, and parsley. I just add extra virgin olive oil and balsamic vinegar for a dressing. And I use the FreshJax Organic Citrus Pepper Blend for some seasoning.

I love using my recipe for The Best Refrigerator Pickles in this salad as it brings some salty and sweetness to this salad. If you don’t have those on hand, or if you don’t want any sugar, you can use cucumbers in their place. You could even add green olives! The best recipe for a Simple Green Salad! This easy and healthy salad makes a perfect side salad or you can add in chicken or steak and make this a meal.

Ingredients

  • 2 cup organic mixed greens

  • Half organic green bell pepper, diced

  • Half organic avocado, diced

  • 1/4 cup diced organic cucumbers or pickles

  • 2 stalls organic celery, chopped

  • Handful of organic pumpkin seeds

  • Handful organic roasted, salted, shelled pistachios

  • 2 organic green onions, diced

  • 1 tablespoons organic chopped fresh parsley

  • Organic extra virgin olive oil

  • Organic balsamic vinegar

  • FreshJax Organic Citrus Pepper Blend

Directions

  • In a large bowl, add the mixed greens, bell pepper, avocado, cucumbers (or pickles), celery, pumpkin seeds, pistachios, and parsley.
  • Drizzle olive oil and balsamic vinegar over the top and sprinkle with the citrus pepper seasoning and stir together.
