I use extra virgin olive oil for healthy baked French fries along with a mix of oregano, thyme, parsley, dill, and lemon juice for these Lemon Herb French Fries. They’re topped with flaky sea salt and fresh basil for light and zesty fries that are so good!

Ingredients for Lemon Herb French Fries

Organic Russet Potatoes

Tips for Baking Lemon Herb French Fries

• Soaking the potatoes in water allow the starches to release. This helps the fries not burn as easily.

• I peel the potatoes for this recipe, which I rarely ever do! But, with this light lemon herb seasoning, I felt like they were better with peeled potatoes. But you can leave skins on if you want!

• Parchment paper really helps with homemade fries. My favorite nontoxic parchment paper is from Kana, and you can use code MIMIBAKES for a discount!

• Be sure to flip and rotate fries for evening browning and to avoid burning on one side.

• Salt the fries immediately after coming out of the oven, this helps the salt stick.

These simple Lemon Herb French Fries make delicious healthy baked French fries. This recipe is a perfect side dish to burgers, sandwiches, or steaks.

Ingredients

  • 1 1/2 pounds organic Russet potatoes

  • 1 tablespoon organic extra virgin olive oil

  • 1 teaspoon organic lemon juice

  • 1 teaspoon organic dried oregano

  • 1/2 teaspoon organic dried l thyme

  • 1/4 teaspoon organic dried parsley

  • 1/4 teaspoon organic dried dill

  • Flaky sea salt

  • Fresh organic basil, chopped

Directions

  • Peel and cut the potatoes into 1/4-inch thick strips. Place in a large bowl of cold water and soak for 10 to 15 minutes, until the water looks murky.
  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Drain the potatoes and add the extra virgin olive oil to the potatoes. Add the lemon juice, oregano, thyme, parsley, and dill, and toss to coat completely. Spread evenly onto the prepared baking sheet.
  • Bake for 20 minutes, then remove and flip fries. Bake for another 10 to 20 minutes or until golden brown. Remove from oven and sprinkle with sea salt and top with fresh basil.
