I created this recipe for homemade Vanilla Malt Pudding last summer, and I have just had so many other seasonal recipes going that I haven’t had time to share this one yet. But, as we’re getting into spring now, you may be wanting some no bake recipes if it’s getting warm where you live. So, the time has finally come to share this recipe for homemade Vanilla Malt Pudding!

And as we head into summer, that’s when I crave malt flavored things as chocolate malt milkshakes were something my dad and I would get in the summertime. So, malt flavored desserts are very nostalgic for me. So, I’m going to teach you how to use malt powder in pudding!

Malt powder has such a unique flavor, nothing else compares to it. And if you know, then you just know! It gives desserts a sweet and creamy flavor that nothing else can replicate!

If you don’t have malt powder, you can still make this recipe and omit it. You will just end up with vanilla pudding!

How long does homemade vanilla pudding last?

Homemade pudding will last for up to 1 week in the fridge. Be sure to store homemade pudding in an airtight container so it doesn’t dry out.

Why Organic

Why use organic ingredients in this recipe? You all know I’m a huge organic advocate, and I bet you may be thinking sometimes, Why would I even bother to use organic ingredients in something that is so sweet and indulgent? But, that is the exact reason why you should use organic ingredients! Sweet things need to have flavor in order to be good, otherwise they are just sweet and they don’t taste like much else. Organic ingredients are more pure than conventional ones, therefore they actually have more flavor than the non organic options. Say it with me, organic means more flavor! Homemade Vanilla Malt Pudding

Smooth, creamy and delicious! This homemade Vanilla Malt Pudding makes the best dessert. Pair it with cookies for an extra indulgent treat.

Ingredients

  • 2 cups organic milk

  • 113 grams (1/2 cup) organic cane sugar

  • 4 organic large egg yolks

  • 1/4 cup organic heavy whipping cream

  • 3 tablespoons organic cornstarch

  • 1 tablespoon King Arthur Malted Milk Powder

  • 2 tablespoons organic salted butter

  • 1 teaspoon organic vanilla extract

  • 1/2 teaspoon fine sea salt

Directions

  • In a medium saucepan, add the milk and cane sugar. Cook over medium heat until it reaches 140°F on a drink thermometer.
  • In a medium bowl, whisk together egg yolks. Once the sugar and milk mixture has reached 140°F, slowly add about half of it into the egg yolks whisking the entire time. Then add this mixture back into the pot and whisk to combine completely.
  • Add in the heavy whipping cream, cornstarch, and vanilla malt powder.
  • Continue to cook and whisk over medium heat until the mixture starts to simmer and has noticeably thickened, about 5 minutes.
  • Remove from heat and add in the butter, vanilla extract, and sea salt, whisk to combine completely.
  • Pour into individual serving dishes or into a bowl, and cover with plastic wrap. Store in the fridge overnight.
