Our usual breakfasts usually rotate between scrambled eggs and toast, veggie scramble with a bagel, eggs with waffles or French toast – but we like to have protein in the morning. But, it is incredibly difficult to find organic pork breakfast sausage! The only good ones out there are Organic Prairie Breakfast Sausages. And our local grocery store doesn’t even stock those. So, I have to order them online. And when we run out, we get sad.
I also order Organic Prairie Ground Pork online as well (because, shocker, our grocery store doesn’t carry it!). So, I’ve found it’s easier to order this and then we can make homemade pork breakfast sausage, or we can use it for dinner.
This way, we just keep our freezer stocked with Organic Prairie Ground Pork, and we can use it for whatever we need. Making breakfast sausage with pork is incredibly easy. When you make homemade pork breakfast sausage you know you will be eating a good organic pork breakfast sausage.
To make homemade pork breakfast sausage, you just add a few simple spices into a bowl with the organic ground pork and mix it up. I use thyme, sage, fennel seed, marjoram, and nutmeg in this recipe for good organic pork breakfast sausage.
After you mix up the pork, you form them into patties. I made these into 2-ounce patties, so I get 8 patties per 1 pound of pork. After that, fry them up in a skillet, and you have homemade pork breakfast sausage!

Yes, you can make different size patties. We do this sometimes when we make breakfast sandwiches, as we want them to be thinner and larger. In this case, we’ll form each 2-ounce patty into a disk that is almost 6-inches in diameter. This is a great size for using an English Muffin or bagel and making a breakfast sandwich.
You can also form them into classic links and fry them up that way as well. Just be sure to cook pork thoroughly if you are making different sizes. That may mean less time for smaller links or longer time for larger patties.
How do I store homemade pork breakfast sausage?
If you do not eat all patties at once, then store them in an airtight container in the fridge. They will keep for up to 5 days in the fridge. You can reheat them the following morning by either microwaving for about 30 seconds, or you can fry it up in a pan, or heat it in a toaster oven or air fryer.

Make your own homemade Pork Breakfast Sausage and enjoy the best organic pork breakfast sausage!
Ingredients
1 teaspoon fine sea salt
1 teaspoon organic sage
1 teaspoon organic thyme
3/4 teaspoon organic black pepper
1/2 teaspoon organic fennel seed
1/4 teaspoon organic marjoram
1/8 teaspoon organic nutmeg
1 pound Organic Prairie Ground Pork
2 tablespoons organic avocado oil
Directions
- In a medium bowl, add the sea salt, sage, thyme, pepper, fennel seed marjoram, and nutmeg. Mix together to combine.
- Add the ground pork and, using your hands, combine the meat with the spices until it is uniform. Form the meat into 8 patties, weighing about 2 ounces each. They should be a little more than 3-inches in diameter.
- In a large skillet on medium/high heat, add the avocado oil. Add four patties and cook for about 2 to 3 minutes on each side, until done. Repeat with the remaining patties.
- Serve immediately or store in an airtight container in the fridge.
