Summer is going to be here before we know it, and I’m so excited! We’re getting a new puppy this summer, and I am literally counting down the days until we can go pick him up. And, I can’t wait to do all the fun summer things with him, like go for hikes and take him to the lakes. And because I no longer own the bake shop, I will have plenty of time to do all of it.
But, I know the beginning of summer can be stressful for some people who are thinking they need to loose weight or get in shape for summer. I like to eat healthy all year round, so I never have this urgency to start eating healthy this time of year, but I know the trend points that way. But, if you eat organic and good for you foods all the time, then indulging moderately is healthy, and that’s the motto that I follow all the time.
So, today I am sharing a super simple recipe that I make all the time. This Healthy Snack Bowl is something Delaney and I make for snacks on the regular. This is a simple hummus bowl with fruits and veggies to dip or eat as well. You could turn this into a snacking lunch bowl if you added some crackers and nuts for a little more balance too. Healthy Snack Bowl
Makes 2 servings
1/4 cup organic hummus
2 large organic carrots, cut
2 large organic celery sticks, cut
1 orange orange bell pepper, sliced
1 organic Fuji apple, sliced
1 cup organic cherries
1 cup organic blueberries
Put the hummus in a small bowl. Place the small bowl in a large bowl.
Assemble cut veggies and fruit inside the bowl for easy dipping and snacking.
