My brother messaged me last week and requested a recipe for chewy granola bars with no sugar. He’s been into biking lately and he asked me for a recipe that contained peanut butter and oats, had no added sugar but was still sweet, and that he could carry with him as a snack. So, I created this recipe for healthy Peanut Butter Chocolate Chip Granola Bars.

My brother is making them with dried strawberries, for a PB & J style granola bar, which I think sounds delicious!

Why use organic ingredients in this recipe? You all know I’m a huge organic advocate, and I bet you may be thinking sometimes, Why would I even bother to use organic ingredients in something that is so sweet and indulgent? But, that is the exact reason why you should use organic ingredients! Sweet things need to have flavor in order to be good, otherwise they are just sweet and they don’t taste like much else. Organic ingredients are more pure than conventional ones, therefore they actually have more flavor than the non organic options. Say it with me, organic means more flavor! Healthy Peanut Butter Chocolate Chip Granola Bars

Try my healthy Peanut Butter Chocolate Chip Granola Bars! These chewy granola bars with no sugar are simple homemade granola bars that make an amazing snack!

Ingredients

  • 400 grams (4 cups) organic rolled oats

  • 226 grams (1 cup) organic peanut butter

  • 127 grams (1/4 cup plus 2 tablespoons) organic raw honey

  • 57 grams (1/4 cup) organic coconut oil, melted

  • 20 grams (1 tablespoon) organic date syrup

  • 1/2 teaspoon fine salt

  • 170 grams (1 cup) organic mini chocolate chips

Directions

  • Preheat the oven to 350°F. Line a 9 x 9-inch baking pan with parchment paper.
  • Add the oats to the prepared baking sheet and spread evenly. Bake for 10 minutes and then stir the oats and bake again for another 10 to 12 minutes, until lightly toasted.
  • In a large bowl, add the peanut butter, honey, coconut oil, date syrup, and sea salt and mix together.
  • Add the oats and stir to combine completely. Then add the chocolate chips and stir to combine completely.
  • Press the mixture into the prepared pan and let set for at least 6 hours or overnight.
  • Cut into 12 bars by cutting the square in half and then in 6 pieces on each side.
  • Store in an airtight container for up to 2 weeks.
