Today I'm sharing a recipe for what I'm calling my Easy Summer Quesadilla. This is a healthy quesadilla recipe that you are sure to love! I love making quesadillas because they are easy, quick, and of course delicious. And I've lightened up the traditional quesadilla with red onions and mango salsa for an easy summer lunch that is so good! I even use my Mango Guacamole which is lighter than traditional guacamole and just perfect for summer.
I actually found this amazing organic mango salsa at Costco – from La Mexicana and it's so good! It's what I used to make my Mango Guacamole and it's delicious on tacos and quesadillas as well. Definitely pick some up for a summer salsa that's sweet and fruity!

Easy Summer QuesadillaDifficulty: Easy
This easy chicken and cheese quesadilla recipe is lightened up with mango salsa and mango guacamole.
2 organic flour tortillas
1 cup organic shredded Colby Jack cheese
1/2 cup organic fully cooked diced chicken
1 slice organic red onion, diced
1 tablespoon organic cilantro, chopped
Organic mango salsa, for serving
Organic sour cream, for serving
Organic Mango Guacamole, for serving
- In a large skillet, add one of the flour tortillas. Next, add the cheese, chicken, red onion, and cilantro. Cook on low heat, and let the cheese melt.
- Once the cheese is melted, place the second tortilla on top and continue to cook for another 1 to 2 minutes or until the bottom tortilla is lightly browned. Flip the tortilla and cook for another 1 to 2 minutes until the other side is lightly browned. Remove from heat.
- Cut into 4 pieces and serve immediately.
