DIY Pickled Vegetables

Today I am sharing the easiest recipe with you guys – it is so easy and I’m very excited about this. If you like pickles or pickled vegetables, then you will love this easy DIY Pickled Vegetables recipe. This really isn’t a recipe, but more of a hack for easy pickled vegetables at home. We do this all the time!

Have you ever been sad about tossing your pickle juice? Have you wondered what you could do with the discard pickle juice once the pickles are gone? Well, you can actually save that juice and add in more veggies to it plus a little more white vinegar and you can pickle your own veggies without much effort.

When we finish a jar of pickles, we save the glass jar and the juice. I toss in whatever we have in the fridge that may be on the fritz – such as broccoli, onions, bell peppers, or carrots. I chop or slice them up and add them into the jar of discard pickle juice. If the juice doesn’t cover the veggies completely, then I add in some organic white vinegar until the jar is full. I cap the lid, and keep it in the fridge for at least 7 days.

The result is pickled veggies that take no effort at all! You don’t need fancy spices or flavorings for this, you just need to find some organic pickles that you like the flavor of and veggies that you want to pickle. While it is also incredibly easy to make your own pickled veggies at home, this simple DIY Pickled Vegetables hack is fool proof! I made pickled broccoli last week with my jar of organic dill pickles I bought at Costco!

Why go organic?

You may be wondering why I push organic ingredients for everything, even savory and healthy dishes. Organic ingredients go beyond just health and wellness, and contribute so much to the taste and flavor of a recipe. So, if you think that you’re making something healthy and buying fruits, veggies, or meats so maybe you don’t need to spend the extra to go organic here – let me sway your thinking.

This really allows the true ingredients to shine – and because of that their flavor shines through. Therefore, organic ingredients are more flavorful than their non organic counterparts. So, just because it’s already a healthy recipe, or you’re already buying good for you ingredients – it doesn’t mean you can skip organic! Trust me here, and make the switch. Your body and your taste buds will thank you!

Easy way to pickle vegetables at home. This DIY Pickled Vegetable recipe is so simple, you’ll make it all the time!


  • leftover organic pickle juice

  • organic white vinegar

  • organic veggies


  • Once you finish a jar of pickles that you really like, keep the juice and jar.
  • Slice or chop some veggies that you like, anything from broccoli, cucumbers, carrots, onions, bell peppers or whatever you choose. Add them to the jar with the pickle juice.
  • Fill up the the jar with the white vinegar until the liquid is completely covering the veggies. Put the lid on.
  • Store in the fridge for up to 1 week before opening. Then, open and enjoy! These will keep in the fridge for 2 weeks.
