Spring is here and there's nothing like a light lunch packed with veggies this time of year. And these Cucumber Sandwiches check all the boxes. I use my Dill Cream Cheese Spread for some added flavor and spice. Sandwich that and a healthy amount of cucumbers between two slices of traditional white bread and you have a tea time snack that is top notch.
The history of cucumber sandwiches goes back to afternoon tea time. It was a snack for the rich and upper class. However, I think it's funny because while these cute little sandwiches have a high class vibe – they couldn't be easier to make! On top of that, the ingredients are not fancy or expensive either. It's literally three ingredients in my recipe below!
Traditional cucumber sandwiches are made with white bread, butter, and cucumbers. However, I've jazzed up mine by using my Dill Cream Cheese Spread in place of butter as it gives these sandwiches a little spice and tang. Also, traditionally cucumber sandwiches have the cucumber skins cut off. But, they have flavor and texture, not to mention nutrients in them like fiber and beta-carotene, so I leave my skins on.
So, rich or poor, famous or not – these cute little cucumber sandwiches can be enjoyed by anyone, anytime, any way you like them. You can pair yours with a cup of tea to feel fancy for an afternoon snack, or enjoy them for lunch paired with some chips and fruit.

Tips for Making Cucumber Sandwiches
• Use plain boring white bread. The smoother in texture the better! You don't want to use a fancy or thick bread here, simple is what we want.
• Slice your cucumbers thin so they can all be stacked easily into the sandwich.
• Prepare the cucumber sandwiches right before you plan to eat them. They can get soggy if left in the fridge, so it's best to prepare them and serve immediately.

Cucumber sandwiches are usually served at tea time, but this recipe for Cucumber Sandwiches makes a light and healthy lunch or snack.
Ingredients
1 large organic cucumber
4 slices organic white bread
Directions
- Make sure the Dill Cream Cheese is made.
- Slice the cucumbers into thin slices, about ¼-inch thick.
- Spread the dill spread onto each slice of bread. Place cucumber slices onto one side of each sandwich. Sandwich together. Slice into small bites to serve.
- Serve immediately.
