So, I have been obsessed with the Zico Chocolate Coconut Water since it came out years ago. Recently, it has been impossible to find in stores or even online, trust me I have scoured the internet (and this was way before the pandemic). I can’t even get it from my organic supplier at the bake shop. And this is the only coconut water I really enjoy. Since I haven’t had it since last summer, I’ve found the Zico Organic Pineapple Mango Coconut Water is the next best thing. This fruity option is really good! But, they don’t always have the fruity one at the market up here either! So it’s very frustrating for someone who likes to have coconut water on hand in my fridge all the time.
I turned my friend Mia onto each of these coconut waters, only for us to both be disappointed together when we can’t buy them in town. This is one of the downfalls of living in a small town, sometimes there is only one place in town that sells something you want, and when they are out there are no other options. So, I finally created a recipe for my own Chocolate Coconut Water, and it tastes exactly like the Zico one! The best part, you can use a subpar coconut water (one that you might not always love to drink) to make it and it still tastes amazing! It’s so easy to make and you can have your own organic coconut water on hand at all times.
Chocolate Coconut Water
Makes 3 servings
2 cups organic unsweetened vanilla coconut milk
21 grams (1 1/2 tablespoons) organic cane sugar
10 grams (2 tablespoons) organic Dutch cocoa
pinch of fine sea salt
11 ounces organic coconut water
In a small saucepan, add the coconut milk, cane sugar, and cocoa powder. Heat until it reaches 140°F and the cocoa and sugar are completely combined. Remove from heat.
Add in the coconut water and stir to combine completely. Place in the fridge for at least 4 hours or until cold.
Store in the fridge for up to 1 week.
