How to Make Caramel Chocolate Icebox Cake
Step 1
I like to make my Homemade Caramel Sauce for this recipe, so I make that first. If you’re too lazy or don’t have time, you can buy the King’s Cupboard Caramel Sauce. It’s good but it’s definitely not as good as making it from scratch!
Step 2
Line a 1 pound loaf pan with parchment paper.
Step 3
In the bowl of a stand mixer fitted with the whisk attachment, add the heavy whipping cream, powdered sugar, and vanilla extract. Mix on low to avoid splattering, and gradually increase speed, until you’re at full speed and stiff peaks form.
Step 4
Spread a layer of whipped cream frosting into the prepared load pan. Drizzle a layer of caramel sauce. Add a layer of cookies. The amount of whipped cream and caramel is up to you, but the thicker you go here, the less layers you’ll have.
Repeat this process of layering whipped cream, caramel, and cookies until the pan is full. Make sure your top layer is whipped cream.
Step 5
Add crumble cookies and a drizzle of caramel sauce on top of the top layer. Place the pan in the fridge for at least 4 hours or overnight.
Step 6
Remove cake from the pan and using a hot sharp knife, cut into slices and serve immediately. Store leftover icebox cake in the fridge for a couple days or in the freezer for up to 1 month (wrap in plastic wrap to keep fresh).
