So, I absolutely love donuts. I mean c’mon everyone does! I grew up eating them on special weekends when my dad and I would walk down to the local coffee shop called Java. They had the absolute best old fashioned chocolate glazed donuts! I even have a cookie modeled off of this donut in my book, Cookies for Everyone.
I’ve never made donuts at home, because I just felt that I couldn’t do it because I don’t have a fryer. But, my friends at USA Pan sent me some of their amazing donut pans for baked donuts. And while I will say, baked donuts are not the same as a donut you would get at a donut shop, they are still a super fun treat to make! Just go into it with the mindset that these are Baked Vanilla Donuts, and you will be so stoked with the outcome.
Since this is the first baked donut recipe I’m sharing, I thought I’d start with a classic – Baked Vanilla Donuts. This is a simple cake donut recipe with a glaze and of course rainbow sprinkles. And let me tell you, this is a much healthier donut than anything you’d get at a traditional donut shop! So, that is amazing and also makes these Baked Vanilla Donuts something you can indulge in more often. This Baked Vanilla Donut recipe is so easy that I am going to be making donuts all the time!
Ingredients & Tools for Baked Vanilla Donuts
Donut Pans You need to have donut pans to make baked donuts at home. If you are familiar with my recipes, then you know I am a huge fan of USA Pan as their pans just work so incredibly good! And this was the first time I was trying their donut pan, and it did not disappoint. Find it here. You will need 2 pans as this recipe makes 12 donuts, and it will just be easier if you have 2 pans.
Organic All Purpose Flour These donuts bake up nicely with organic all purpose flour. I prefer to use this instead of cake flour here so they are a little more dense like traditional cake donuts. You can use any kind of organic all purpose flour you like, even the grocery store brand. Flour isn’t something you need to spend a ton of money on, but just be sure to buy organic.
Organic Cane Sugar Organic cane sugar is needed to sweeten these donuts.
Organic Nutmeg This seemingly simple spice is what gives donuts their distinct flavor. It’s truly necessary! Even if you think you don’t like nutmeg, I bet it’s in all kinds of things that you don’t usually know about. Trust me on this! My favorite organic nutmeg can be found here.
Organic Eggs I use 1 large egg in this recipe. If you don’t have large eggs and only have extra large or medium, then be sure weigh them. 1 large egg weighs about 50 grams, so if you only have medium or extra large then be sure to beat them and weigh them so you’re only using 50 grams.
Organic Heavy Whipping Cream I love using heavy whipping cream as opposed to milk in cake recipes as it gives it a smoother and creamier texture. My favorite heavy whipping cream is Organic Valley, but if you’re buying an organic heavy whipping cream then most others are very similar. Organic Vanilla Greek Yogurt I use organic vanilla greek yogurt in this recipe. But, if you only have plain greek or just plain regular yogurt, that will also work too!
Organic Salted Butter I always organic salted butter, and my favorite is Organic Valley. If you are using unsalted butter, just be sure to add additional salt, it is usually about 1/4 teaspoon per 1/2 cup, since this recipe is only 6 tablespoons, just add a scant 1/4 teaspoon extra.
Organic Vanilla Extract Organic vanilla extract is a baking essential. My favorite is Simply Organic, which you can find here.
Organic Powdered Sugar Glaze wouldn’t be glaze without powdered sugar! My favorite is Florida Crystals, but Wholesome is also really good too. Just make sure you sift powdered sugar before using it.
All Natural Rainbow Sprinkles Let’s be real, donuts wouldn’t be the same without sprinkles. While, the ones I had growing up never had them, I have always subconsciously associated sprinkles with donuts as they just look so cute! I use India Tree’s Nature’s Colors Sprinkles that are made with plant dyes and no artificial colors. I love the pastel look too! You can find them here. These are not necessary at all, but just make them more fun.
Baked Vanilla Donuts
255 grams (2 cups) organic all purpose flour
170 grams (3/4 cup) organic cane sugar
2 teaspoons baking powder
1/2 teaspoons organic nutmeg
1/4 teaspoon fine sea salt
1 organic large egg
1 cup organic heavy whipping cream
1/2 cup organic vanilla greek yogurt
6 tablespoons organic salted butter, melted
1 teaspoon organic vanilla extract
Organic canola oil cooking spray
284 grams (2 cups) organic powdered sugar, sifted
3 1/2 tablespoons organic milk
all natural rainbow sprinkles
Preheat the oven to 400°F.
To make the batter: In the bowl of a stand mixer fitted with the paddle attachment, add the flour, cane sugar, baking powder, nutmeg, and sea salt and whisk together to combine.
Add the egg, heavy whipping cream, yogurt, melted butter, and vanilla extract. Mix on low until combined into a thick batter. Transfer the batter to a piping bag.
Spray the donut pans with canola oil cooking spray. Pipe the batter into into the pans, or if you don’t want to pipe, you can also just spoon it into the pans too!
Bake for 10 to 14 minutes, or until a wooden pick inserted in the center comes out clean. Allow to cool completely in the pans.
To make the glaze: In a medium bowl, add the powdered sugar and milk and whisk together until you have a smooth glaze.
Using a butter knife of spatula spread glaze on top of each donut and top with rainbow sprinkles.
Store in an airtight container for up to 3 days.
High Altitude — Bake at 400°F for 8 to 12 minutes, or until a wooden pick comes out clean.
