A Dozen Eggless Cookie Recipes

While we are in an egg shortage, prices have risen due to short supply of eggs. If you're on Instagram, then I'm sure you've seen the hilarious egg memes with egg dealers and egg sugar daddies. I love all of them, so funny! But, with the recent increase in egg prices, you may be struggling to want to use your precious eggs to make cookies.

But, don't worry, you don't need eggs to make soft and chewy cookies. In fact, cookies made without eggs can and usually are softer and chewier. Why? Because, eggs are made up of mostly egg white. One large egg weighs 50 grams, and within that, only about 17 grams is egg yolk and the rest is egg white. Why does that matter? Egg whites are made up mostly of water, and water dries out cookies!
